The dispersion kettle has been successful in the industrial production
of ready-to-eat products for many years.
Originally, the dispersion kettle was developed
to complement the tilting boiling kettle
to allow the user to prepare starch suspensions
for thickening soups and sauces
and then add them to the product in the boiling kettle.
Today, the dispersion kettle performs
many more tasks in an industrial kitchen.
Typical applications for the dispersion boiler are
the rapid dissolution of solids in liquids,
emulsification processes and the addition
of highly clumping and expanding thickeners.
The dispersion boiler has a conical boiler shape.
The dispersing device mounted in the bottom of the boiler
creates a vertical and intensive fluid flow that is deflected by the corresponding boiler contour on the walls.
This intensive mixing effect destroys agglomerates
and eliminates clumping.
By eliminating preferential flows,
the anchor-shaped agitator mounted
from above supports the dispersing or emulsifying process
A grid lid mounted adjacent to the boiler lid allows powders
to be added as the agitator rotates.
