Disc tempering machine for approx. 3.000 kg per hour
The machine continuously tempers chocolate masses
to the preselected temperature.
The mass is pumped by a mass pump
(not included in the scope of supply)
through the individual cooling or heating sections,
in which scrapers ensure optimum heat exchange
at the cooling surface. The cooling medium used is cold water,
which is fed to the cooling disks via solenoid valves.
Resistance sensors continuously measure the mass temperature
of the individual temperature control zones
and compare it with the set data.
In the event of corresponding fluctuations,
the control system intervenes and regulates
the temperature to the set value via the solenoid valves.
The last temperature zone in the upper section of
the machine can be used either for cooling
or for heating as a reheating stage.
For downtimes, the machine is switched to night operation,
whereby hot water flows through the machine
and the solenoid valves close.
