Warm milk skimming:
Milk skimming during pasteurization is
the most common centrifugal separator application in dairies.
The purpose of the skimming process
is to separate the raw milk into skim milk and cream.
In a centrifugal separator the disc stack is equipped
with vertically aligned distribution holes.
Fat globules are separated from the milk
in the disc stack of a centrifugal separator.
As in the clarifier, the high-density solid impurities
in the milk will quickly settle outwards towards the periphery of the separator.
Sedimentation of solids is assisted by the fact that the skimmilk
in the channels in this case moves outwards towards
the periphery of the disc stack.
The fat globules, has a lower density than the skimmilk
and therefore moves inwards in the channels,
towards the axis of rotation.
The cream continues to an axial outlet.
The skimmilk moves outwards to the space outside the disc stack.
