Ideal for hard muscle structures (e.g. topside or silverside) of beef, pork etc.
The meat is relaxed by compression process which uses specially formed rollers that rotate against each other.
The stretching and breaking of the muscle structure leads to the following:
Filling, insertion and cooking properties are improved;
Higher product uniformity within a batch;
Subsequent massage processes can be optimised;
