The fruit and vegetable puree line is a well-designed system
that efficiently processes raw produce into a smooth,
homogeneous puree. Here’s a detailed description of
each component in the line:
### 1. Chopper
The chopper is the first stage in the puree production process.
It is designed to reduce the size of various food products,
including fruits and vegetables. The cutting mechanism utilizes
hammers that strike the produce against plates,
allowing for the adjustment of particle thickness.
This flexibility ensures that the raw materials are prepared to
the desired size for optimal processing in subsequent stages.
### 2. Pulper
Following the chopper, the pulper plays a crucial role in
preparing the product for screening. It ensures a
uniform grain size, which is essential for achieving a
consistent texture in the final puree. The pulper consists of a
robust main body housing a motor that drives the blades of
a pusher. As the product is fed through a hopper,
it descends into the pulper, where it is pressed against a sieve,
effectively separating the pulp from any unwanted solids.
### 3. Product Cooling Tank (250 L)
After pulping, the product is transferred to a
250-liter stainless steel cooling tank.
This tank is designed to lower the temperature of
the puree using water cooling, which is vital for
preserving the quality and freshness of the product.
Key features of the cooling tank include:
- Motor Scraper: This component generates movement,
allowing the scraper to effectively mix and
move the product within the tank.
- Level Controls: The tank is equipped with maximum and
minimum level controls. The maximum level control
prevents overflow, while the minimum level control ensures
that the pump does not operate when the tank is empty,
protecting the system from damage.
### 4. Reactor Tank (250 L)
The reactor tank is another 250-liter stainless steel vessel where
the cooled puree is mixed with additional ingredients.
This tank is equipped with several important features:
- Motor Scraper: Similar to the cooling tank,
this scraper facilitates mixing and ensures uniformity in
the product.
- Vacuum Pump: This pump creates a vacuum environment to
minimize oxidation during processing, which is crucial for
maintaining the product's flavor and nutritional value.
- Reactor: A high shear mixer is employed for the
homogenization of all components, ensuring
that the mixture is consistent and well-blended.
- Flow Meter: This device accurately measures the quantities of
water, oil, and vinegar
-Level controls: the maximum level control prevents the
product from being poured out of the tank and
the minimum level control prevents the pump from
working when it is empty.
